In food applications, our products help to improve the texture, structure, consistency, stability and health values of many products.  They can also be used as binders, thickeners, fat replacers, egg replacers, and as an aid in the formation of meat products.  Learn more about the benefits they bring to the following applications:

Baked Goods

clear+stable, METHOCEL™ and WALOCEL™ products provide many important benefits to baked goods, such as improved texture and structure, stability during freeze/thaw and baking processes, and better volume and moisture retention for light, moist cakes, muffins, breads, and more.  They also enable the production of gluten-free products.

Beverages and Nutritional Drinks

In beverages, our products provide great suspension characteristics under a wide range of temperatures without a slimy mouth-feel.  In products like smoothies, they provide excellent ice crystal control. They also help provide thickness and creaminess to beverages like shakes, without masking flavor, and can quickly provide stable foams in instant cappuccinos.  FORTEFIBER™ Soluble Dietary Fiber products are also ideal for use in nutritional drinks, and provide the added benefit of helping to maintain healthy blood glucose, insulin, and cholesterol levels.

Confections and Desserts

In glazes, icings, and coatings, our products provide creamier texture, improved spreadability, and clean flavor release. Elasticity and film integrity can be improved while fragility and crystallization can be decreased. Our food gums also add lubricity for easier application of glazes and icings.
During heating, METHOCEL™ Food Gums thermally gel, a unique property that keeps icings and glazes intact and in place on products. During subsequent cooling, the thermal gel structure reverts to the original consistency of the product.

In dessert applications, our products give foods like puddings, custards, ice creams and mousses a rich, creamy texture with a clean finish.  They also improve air entrainment for better body, appearance, and mouthfeel.  METHOCEL and WALOCEL™ products can also be used to stabilize foams and provide emulsifying properties to improve overrun.  These products can also significantly extend standing times for toppings.

Fillings

In fillings, the unique thermal gelation feature of METHOCEL products reduces boil-over during baking and inhibits moisture migration from fillings to crusts. They also provide melt restriction and reduce headspace.

METHOCEL and Walocel products give fillings uniform product consistency, even through freeze/thaw cycles.  They can also be used as fat replacers to enable the production of reduced fat fillings with lower calories.

Formed and Extruded Foods

METHOCEL and WALOCEL products help formed, structured foods keep their shape through processing, cooking, shipping, storage, repeated freeze/thaw cycles, and final preparation for serving.  They also provide ideal binding performance, and aid in extrusion and improve release properties in other forming processes.  Our products also enable less oil to be absorbed during frying processes, reducing the fat content of the finished product while also retaining more natural moisture.

Pet Foods

Our products improve the emulsion stability and solids suspension of pet foods.  They enable these foods to remain more uniform and have less tendency to separate during handling and storage.

Soups, Sauces and Glazes

METHOCEL™ and WALOCEL™ products are an excellent choice for getting the most out of processing and serving hot, thick liquids. They hydrate rapidly and are excellent thickeners and stabilizers, providing velvety texture and stability for restaurant style soups and sauces. They add emulsification to prevent oil pooling during shelf life.

Satisfit Weight Control Technology

SATISFIT™ is an innovative new technology for weight care from the Food & Nutrition business.  In pre-clinical studies, it has shown the ability to help reduce weight gain, help reduce the absorption of saturated and trans fats, and promote fat metabolism.  To meet a critical customer demand, SATISFIT has been specially optimized to provide ease of formulation in the fast-growing functional foods market, especially in dairy and beverages, snack applications like biscuits and bars, and ready meals.
